Background.

Chai's history in the New Zealand cafe scene began in our kitchen. yes we pioneered this ancient Indian beverage way back in 1996 (before starbucks had even gotten off the plane). one of our employees went off to found his own Chai business after signs of high and repeated customer appreciation, creating a distibution network to many cafes throughout New Zealand.
Today, Chai is nearly a household word due to peoples appreciation of its unique character. Consistent with the decor and food, our Chai continues to reflect our highest business credo:

Ingredients

Red bush tea (base): proven anti-aging qualities relating to brain function, a powerful antioxidant and free radical scavenger protecting the body against diseases like stroke, cancer and heart attack. Rich vitamin and mineral content promotes healthy teeth, skin and bones. Improves circulation, protects against infections and haemorrhages, facilitates removal of metabolic wastes, and prevents fats from changing into harmful lipid peroxide. Alleviates food allergies.

Cinnamomum zeylanicum – medicinally C. is astringent & carminative. Strong stimulant for the glandular system, antacid thus helpful for the stomach upsets and diarrhoea. Good for colds and sore throats. Used in previous times as a breath sweetener & a tonic for the whole system. Old Testament mentions use as an ingredient of the holy annointing oil used by Moses.

Eugenia aromatica – mild anaesthetic and pain killer. Good for toothache.

Elletaria cardamomum – helps against flatulence and disorders of the stomach & stimulates the appetite. Chewed by the ancient egyptians to keep the teeth white.

Zingiber officinale – stimulates digestion and eases flatulence. Having antiseptic qualities, also useful as an expectorant when combined with other remedies. Cultivated for its rhizomes and considered to be essential in the daily diet as protection against dieseases.

Foeniculum vulgare – accelerates digestion of fatty foods, helpful for earache, toothache, coughs & asthma. Recommended by Pliny for the eyesight, and by medieval herbalists as an antidote against poisonous herbs, mushrooms & snakebite.

Myristica fragrans – carminative, helpful against flatulence and vomiting. Aids digestion. Native of the Molucca islands in the East Indies.

Piper nigrum – medicinal value in the increased digestion of rich meats & high protein foods. Relieves congestive colds & fevers.

Vanilla planifolia – low medicinal value but with unique scent & flavor, sweetly aromatic & delicate. Discovered 1520 in Mexico by the Spaniards where the Aztecs used it to flavor their chocolate drinks.

Illicium verum – a stimulant & a diuretic, helpful against nausea. Used in china for constipation, hernia & bladder troubles.

Chicorium intybus – used in europe as an additive to coffee. Counteracts the stimulating effects of coffee.
